What is your best cooking advice?

Remember when you started cooking. I bet there was a time when you said: ';If I knew this before';...What is your best cooking advice?

Most important tool in your kitchen is your tastebuds!
don't switch your amounts of water vs oatmeal , it's a mess i never forgot . don't throw ice water into a deep fryer , i never forgot that one either
Don't cook chicken breasts (Supremes) too much. Obviously they must be cooked thoroughly, but just until they feel firm to the touch (not pink). Overcooked, as most restaurants do, they are dry and tasteless. This is why they are usually coated in some overpowering sauce so they taste nice.
Clean as you go and never leave your kitchen messy.
You can never have too much garlic

your advice will be taste the food every 2 minutes or so and see what is need to be added in to it
most definatly the best cooking advice anyone can listen to is: dont serve anything you wouldnt eat yourself.
Use a recipe as a guide, be creative, do not overcook anything and use lots of garlic...when ever you can!

The other is taste your cooking - seasoning is very important.

I can't tell you how many times I would start cooking something and realize I was out of something I thought I had, or just wasn't practiced enough to to prep work between steps, like dicing up several onions before what was already happening was finished.
Always be open to advice. You are showing good signs by posting a question like this. I love to cook, and I have learned some of my most important lessons by being teachable. My best pieces of advice would probably be:


1) Never walk away from what you are cooking.


2) Always make sure you have everything you need before you start cooking.


3) ALWAYS crack eggs in a bowl first, unless you want a crunch to whatever you are making.





Other than that, you learn by making mistakes. Have fun! :)
Never get too emotional when cutting onions. ; )
Careful when working with grease (it splashes and catches fire easily).
